I can see some of you blanching at the idea of Pretzel Salad. However, I want to assure you that this is scrumdilicious. My cousin, Anita, makes this for our family gatherings (hugs, Anita!!!!) –which reminds me that we are DUE for another gathering…it has been a while…hmmm–and there are never any leftovers.
Now, there are many different ways to make it so this recipe may not be Anita’s exactly…but you can play and experiment. She serves her in a big glass bowl instead of a pie. Either way, yummmmmmy.
- 2 1/2 cup pretzels (crushed fine with lots of salt)
- 3 tbsp brown sugar
- 1 cup butter
- 1 pkg instant strawberry jello
- 1 16 oz container fresh strawberries, sliced
- 1 8 oz pkg cream cheese
- 1 cup sugar
- 1/2 tsp vanilla
- 1 Cool Whip (8 oz container)
Crush the pretzels and mix with the brown sugar and melted butter. Press into a pie pan to bake for 10 minutes at 325 degrees. Cool in the refrigerator. Mix cream cheese, sugar, and vanilla until smooth (no lumps). Add Cool Whip. Spread over the cooled pretzel crust. Make jello as instructed and allow to cool in the refrigerator until the consistency of jam. Line up the sliced strawberries in the cooled crust with cream cheese mixture so that it’s pretty. 😀 Spoon jello over mixture and put back in the fridge for at least an hour.
Be prepared for accolades as the best mom/hostess in the world!!!!
